What’s the benefit of outsourcing my PCB layout?

Is it possible to connect a standard mezzanine connector to a flex PCB?
D.w.z. could I use a mezzanine connector meant for connecting two rigid PCBs in a situation where one is flex and one is rigid?
How does a conventional board house deal with the issue of reflow during PCB component assembly with BGA’s on both sides of the board?
Are two different solders used (like regular lead free SAC305 and a low temp?)
Last week we visited a PCBA factory. We were looking at reflow ovens. A lot of them have a metal conveyor belt the boards sit on. On a double sided board, when you put the board on the metal belt, won’t the metal belt knock components off as they are only held on by paste?
If I want to design a PCB with as much noise immunity as possible, should I leave off test points? Can PCB test points be a source of noise?
I have some PCBs that were wave soldered but the vias still remain open, they are not filled nor plugged form what I can see. I do not see any solder on the annular rings of the vias either. How do they go about doing so?
Is there an industry standard for showing how plates in the SMT cap are oriented? How can you tell if it is a square-rectanguloid instead of being flattish in one dimension?
What I would like to know is if ICs also have a limited shelf life and if so, do some types suffer more than others?
The assembly note states: Bake bare PCBs in a clean and well ventilated oven prior to assembly at 125*C for 24 uren. Why is this necessary?
